Melon Compote Make balls of honeydew and cantaloupe. Sweeten heavy cream with powdered sugar, and pour over melon. Scatter with fresh blueberries, or sliced fresh strawberries. Chicken Salad To 8 cups of prepared chicken salad add: 2 cups diced dill pickle spears, drained, 1 cup chopped celery, 2 cup softened cream cheese, 1 tsp. freshly ground pepper, 1 tsp. salt, 1 T. onion powder, 2 cup mayonnaise, 1/4 cup chopped parsley. Warm slightly to make more spreadable, spread thickly on buttered white bread, top with another slice of buttered white bread, chill to firm. Cut off crusts, cut into 4 triangles. Make as many as filling allows. Cream Cheese and Cranberry Slice French bread into about 50 slices, cut into circles with round cookie cutter, spread entire surface with soft cream cheese. Chill 5 cans of smooth cranberry sauce overnight. Remove both ends from cans, slide whole tube of cranberry sauce and carefully slice onto a cutting board. Use small heart cutter to cut out cranberry hearts, arrange on cream cheese covered bread. Crab Salad To 8 cups of chopped crab, add 1 cup frozen peas, 1 cup Miracle Whip, 1 jar chopped pimentos, and 1 cup chopped celery. Warm 1 pkg. of cream cheese with 1/4 cup Glacé de Fruits de Mer, (lobster demi-glacé. Whisk together, stir into crab mixture. Spread on 50 slices of buttered party rye bread. Put 12 hard-boiled eggs and 1 1/2 cups Miracle Whip, and 1 tsp. mustard into food processor, and process until smooth enough to pipe a large rosette in the centre of each canapé. Dust lightly with paprika, garnish just to the right of the rosette with a single leaf of parsley. Smoked Salmon Canapés Toast one side of slices of white bread. Let cool. Turn toasted side down, use circle cutter to cut out rounds. Mix 2 cup mayonnaise with 2 cup softened cream cheese, 4 T. onion powder and dried dill, and spread generously on rounds, put in fridge to firm. Cut 1/2 inch by 2 inch strips of smoked salmon, roll each up, to resemble an opening rose. Place on chilled round, add sprig of fresh dill. Cucumber Sandwiches Spread 50 slices of party pumpernickel thickly with whipped, salted butter, (use popcorn salt). Flute and slice large cucumber, slice and top buttered bread. Drain 5 cans of shrimp, mash with 3 cups mayonnaise, 4 drops red food colouring, and 1 T. freshly ground pepper. Put dollop in centre of each cucumber slice. *50 cherry tomatoes Prick the tomatoes all over with a cocktail stick. Soak the tomatoes in a mixture of the next seven ingredients for 24 hours in Zip-Lok bag with the air pressed out. Skewer with pink party pick. Chill until ready to eat. Serve with a shaker of celery salt.
Make commercial pink lemonade with 7UP, instead of water, according to package instructions. Garnish each glass with a pink rose petal. In serving dishes make a nest of well shredded lettuce. Slice 25 bananas, divide among glasses. In blender put 1 large jar of stemless maraschino cherries, with juice, and 5 cups mayonnaise. Blend until smooth. Pour over bananas. Chop 4 cups walnut pieces, coarsely, then scatter over dressed bananas, the top with a single, whole maraschino cherry.
